1940's Cooking

More precisely cooking food processer recipes without a food processor.  I have been doing a lot of cooking since we got here, in fact I cook three meals a day.  When I say cook I don't mean I poor a bowl of cereal I mean I cook omelets every morning.  Yesterday I wanted to make hummus and pesto which are pretty quick if you can whirl them in a processer but as well stocked as my kitchen is a food processor did not come with it.  But I had time to kill and will not be discouraged 

Hummus:


1 can (15oz) chickpeas
2 tablespoons lemon juice
1/2 cup tahini (good luck finding it)
1/4 cup chopped onion
3 cloves garlic
2 teaspoons extra-virgin olive oil
2 teaspoons ground cumin
1/8 teaspoon ground pepper
1/2 salt

Drain chickpeas, reserving 1/4-1/2 cup of the liquid to thin mixture if needed.  Combine everything in blender or food processor. Refrigerate and enjoy.  

What fun it that?

Chop onion and Garlic.

Mash Chickpeas

Better
Combine Lemon juice, tahini paste, olive oil, cumin, salt and pepper.


Stir, refrigerate and enjoy. Ice arm.

Ta Da!
Pesto in a bag:


Ingredients: 
2 cloves garlic
1 cup chopped fresh basil leaves
2 tablespoons extra olive oil
1/4 cup grated Parmesan cheese
2 tablespoons pine nuts
Ziplock Bag

If you have a food processor threw everything in and whirl 

Told you your own herb garden would come in handy.  Sadly I barely have a tablespoon of basil let alone a full cup, so I had to use store bought.

Instructions

Fine chop basil and garlic. (like hummus fine chop)

Put pine nuts in ziplock bag and then roll with a rolling pin if you don't have a rolling pin like I didn't have any heavy glass round bottle will do.  I am using a white wine vinger bottle.


Once throughly mashed add garlic, basil, olive oil and parmesan cheese to bag.


Close bag and then roll with heavy round object to mix ingredients.


Done!
 This recipe will make enough to go on top of 6 six tomato halves that you can then broil and are delicious. Sadly I did not remember to photograph the tomatos as I was too busy eating them.  The pesto is pretty easy.

I already had everything else in the kitchen

Time: 2 hour (1/2 hour shopping, 1 1/2 preparation)       
Average : $4.40 /hr entertainment

Perks: 
 I made dinner and I thought about not even totaling the cost as I was going to have to buy these things for dinner anyway.  I also have enough of tahini and pine nuts for several more servings so next time I can make each for a dollar a piece.  My right arm also got a nice mini work out.

I'm impressed. I have a pumpkin hummus recipe I want to try, but the lack of food processor has stopped me. ps I'm a fan of the apron and headband.
